Laura, classic film noir. The whole film music is based on one theme, which is the jazz standard "Laura". One of the greatest songs ever, if you ask me. The film score is endless variations on that theme. Search amazon for "Laura suite" and you'll find it.

Piarates of the Carrebian ,Paerl Harbour, Titanic, Top Gun, Mission Impossible. I love all of 'em very much.

My favs over the past few years are:

Punch Drunk Love (pretty much anything Jon Brion touches)
Dancer in the Dark (basically the saddest movie ever, but friggin AWESOME soundtrack)

I've certainly got others but these always stick out to me.

I'll second this....pretty much all of the "...squatsi" films have radical scores! One of the groups that I play with "improvises movie scores live."

Basically we choose a movie and project it while we improvise. It's certainly yielded some great music (at least enough for an album!!) and we have played to Koyaanisquatsi a number of times.
